First decade of October. Hand picked and transported in little cases, with great respect to integrity of the grapes;
Limited contact of must and shells, max. 6 – 8 hours at controlled temperature of 12° C. With selected yeasting agents at 18° C
In stainless steel and 2 months in glass
Excellent with spicy dishes of mediterranean kitchen and other traditional main dishes;
The early harvest of Aglianico grapes gives to the Wine harmony and edibility after 4 – 5 months from picking, with fresh and fragrant notes of flowers and fruits. Sweet aftertaste and never to dry with tannins.
